Apple Cobbler
6 medium apples (Granny Smith work well.)
1 cup water or apple juice
1/3 cup brown sugar
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
For the batter:
1 cup all-purpose flour
1/2 to 1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
5 Tablespoons melted butter
Instructions:
Preheat the oven to 350F.
Grease or spray a 9x13 baking pan.
Saute the apples with a little butter. When the apples are just partially cooked, mix the brown sugar, water, lemon juice, vanilla, cinnamon, nutmeg, and salt. Heat the mixture until just boiling. Mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry, then stir into the hot fruit mixture. Cook over low heat for a few minutes, stirring occasionally. When the cornstarch thickens, stop cooking the mixture. Don't overcook the fruit. Pour mixture into the prepared 9x13 pan. This recipe can be made with berries or peaches too, by substituting the apples for another fruit.
In another bowl mix together the flour, sugar, baking powder, and salt. Stir in the milk and melted butter, just until combined. Pour the mixture over the apples in the pan. Sprinkle lightly with cinnamon if desired.
Bake for about 35-40 minutes, or until a toothpick inserted into the topping comes out clean. I like to make sure the cobbler is golden brown.
